Ingredients
¼ lb thinly sliced bacon
½ cup chopped green onions
1 tablespoon butter
1 cup heavy cream
1 cup milk
Splash of oyster liquid
¼ cup sherry
1 cup chopped celery
1.5 cup chopped onion
3 dozen oysters (save the liquid)
1 pinch cayenne, pepper and salt
Tabasco and Worcestershire to taste
Paprika and green onions for garnish
¼ cup fresh lemon juice
Zest of half a lemon
Directions
Cook bacon in pan until crisp.
Drain off and discard half of the grease.
Add butter and sauté celery and onion until translucent.
Deglaze with sherry.
Add heavy cream, milk, cayenne pepper, pepper and salt and bring to a boil while shaking pan (rather than stirring) until the liquid thickens.
Add oysters and their liquid and cook until oyster edges curl.
Add lemon juice and zest.
Ladle into cups (or bowls) distributing oysters evenly.
Garnish with green onions and paprika.
